Hi friends!!!!

Hello blog world! I just wanted to check in and let you know that I'm still here and plan on returning to my old bloggin ways soon!

Life just gets so busy at the beginning of the year for Jon and I, that I have a hard time posting, but hopefully next month, Ill have lots of fun post for everyone!

We redid our bedroom, and I just love it! Jon actually loves it too, when we 1st made the change, he kept commenting on how happy he was with the outcome, yay me!
We had friends from Portland spend MLK weekend with us! SO much fun! Ill be posting about our fun adventures soon
My life at work has been revolved around our big office move.  Here is a preview of my brand new office! I love it! And I get a super cute light purple wall! Ill post my new office once I get moved in :)
My current office.... I will not miss it AT ALL! and I def will NOT miss those darn orange crates! I think ill have nightmares about them for a while! lol

Took Miley to the vet Tuesday, which is inside petsmart, lucky girl walked out with 2 new sweaters.  Here she is sporting her new Lil Wayne hoodie.  She thinks shes so cool in it, shes such a gangster!
Another sneak peek of a blog post to come! The AWESOME shirts I made for Mr. Burns, our friends and I.  We are headed to Palm Springs tomorrow afternoon for 5 whole days, so I made us couple shirts, I am so excited for everyone to wear them so we can take awesome pictures together.  My husband thinks I'm crazy because I've been obsessing over them for a few weeks now :)

Red velvet cheesecake cookies! YUM!‏


A few months ago I found this yummy recipe on pinterest and I was very excited to try it out.  I’ve made these cookies twice now and they always turn out SO yummy and moist!
This is what you will need for the cookies:
1 box red velvet cake mix (I used Duncan Hines)
2 tablespoons all-purpose flour
2 large eggs
1/2 cup canola oil

And what you need for the cheesecake filling:
4 oz cream cheese, at room temperature
2 cups powdered sugar
1 teaspoon vanilla extract

For the white chocolate drizzle:
1 1/2 cups white chocolate chips, melted

***Please note: The cookie dough & the cheesecake filling will need to be refrigerated for at least 2 hours.  Something I didn’t read the 1st time, which then lead me to have a long night of baking! Lol***

To make the cookies:
In a large bowl combine cake mix and 2 tablespoons all-purpose flour. Whisk until clumps disappear.
In the bowl of a stand mixer, mix together flour cake mix, 2 eggs, 1/2 cup oil and 1 teaspoon of vanilla extract. Mix until smooth.

Wrap the dough in plastic wrap. The dough will be oily. Refrigerate for at least two hours.

To make the cheesecake filling:
using a mixer, combine 4. Oz of cream cheese, 2 cups of  powdered sugar, and 1 teaspoon of vanilla extract. Mix until smooth.
Using a teaspoon, scoop out cheesecake filling and place on a plate. (If the filling is too runny, like in this picture, use more powdered sugar, which I did the 2nd time I made them, and the filling turned our perfect)
Place plate in the freezer and freeze for at least two hours.  The picture above is of the filling AFTER I had put it in the freezer.... 

Preheat oven to 350 degrees F.
Line a large baking sheet with parchment paper or a silicone baking mat.

To assemble the cookies:
Take about 1/4 cup of red velvet cookie dough and flatten in your hands.
Place a teaspoon of cheesecake filling in the center and wrap the cookie dough around the filling.
Gently roll into a ball and place on prepared baking sheet.  The recipe says to only bake 3 cookies at a time, but I did 6 cookies at a time and didn’t have any problems, my scoops may have been smaller than what the recipe calls for.
Bake for 11-13 minutes or until the cookies begin to crackle.  I baked them on a silicone baking mat and I had no problem with them sticking. 
Let the cookies cool on the baking sheet for 5 minutes.
Remove from baking sheet to a wire cooling rack and cool completely.

White chocolate drizzle
Melt the white chocolate chips in a microwave safe bowl or over a double-boiler.
Drizzle the white chocolate over the cooled cookies with a fork.

Let the cookies set until the chocolate hardens. Serve and enjoy!

5 yrs and counting!

Jon and I celebrated our 5 year anniversary Saturday.  We had a great day at Capitola beach, even though it rained while we were there we made the best of it and had a wonderful day.

The lady that took our picture thought that Jon and I were a new couple, and was surprise to know that we were celebrating 5 years.  She said that we still acted and looked very much in love.  I thought that was so sweet :)

 After wine tasting we headed to "Shadow Brook" for some food and drinks, and the place was really cool and pretty! When we 1st got there, we didn't realize that you have to ride a trolly down to the actual restaurant, which is down in the trees, it was really cool.  We sat in the lounge, but it didn't feel like a bar at all, I felt like we were hanging out in a tree house, I loved it!

Checking out the food options, we ended up with the cheese fondue which was super yummy and Jon got their clam chowder
They had a martini flight, so of course I had to try it out!

Heres to 5 more wonderful years with Mr. Burns! I love you very much baby and you make me so happy! I love the life that we have together and all of the adventures we have been on! You rock my world baby! :)

Our New Year Celebration!

Jon and I rang in our 1st new year as California residents! Yay! We had a wonderful time celebrating! Jon’s boss, Tom, and a friend came over to our place,  we hung out at home for a bit and then headed out to a local Irish pub for the night.  It was a nice &  low key night and we had a lot of fun.

Christmas Celebrations!


Hello blog friends!!! I haven’t been the best blogger these past 2 months, but It’s just so hard to blog during the holidays.  But I plan on returning to my old blogging ways and post a few times a week, we’ll see how that goes!

I hope everyone had a wonderful Christmas and happy new year.  Jon and I had a great time! My mom and nephew, Felipe, flew in from Portland to spend Christmas with us.  We got to spend 9 whole days with them and we had a wonderful time! My mom cooked up lots of delicious Mexican food for us to enjoy and we had many adventures together.

Christmas eve was a pretty and sunny day, so we decided to take full advantage of the sun and headed out to the Santa Cruz boardwalk for the day.  All of the rides on the boardwalk were closed, but we spent some time playing games in the arcade.   On the way home, we decided to take the scenic route and were able to watch the beautiful sun setting over the ocean!  We then celebrate Christmas eve with a Mexican feast!  Growing up, we have always celebrated Christmas on Christmas eve, we all stay up until midnight and then open all of our gifts.  But since Jon and I are starting new traditions, incorporating the old ones with the new ones, we stayed up until midnight, and only opened 1 gift.  I think it’s a good compromise.

Christmas day, we opened the rest of our gifts and spent the day relaxing and eating, that’s what the holidays are for right? Lol.

One of the special gifts I got my mom for Christmas.  I ordered it off of etsy and put it in a picture frame, she loved it! 
Thursday morning, we packed up the car and started on our 5 ½ hour road trip to LA, to visit my mom’s side of the family.  We stayed in Orange county until Sunday morning and had a great time! It was so nice to spend time with my aunts and cousins, and Jon finally got to meet part of my extended family.  He and my cousins husbands totally hit it off and were already planning on more visits between them and us before we headed back home on Sunday.

Once we arrived back in San Jose Sunday afternoon, it was time to say goodbye to my mom and Felipe.  We had a wonderful Christmas and are so lucky that we got to have my mom and nephew with us to celebrate the holidays.  Hopefully we can have more family around for future holidays to come!
